I have tied a new juice this morning. Saw a recipe on Reboot Your Life and thought it was great, but I did not want it to be too sweet, plus I felt it was missing greens. I modified, added some kale and it created a delicious balanced flavor, definitely not too sweet and cinnamon gave it a wonderful holiday flavor. I loved it!
Cleaning squash can be a pain, so I have purchased a half of a cleaned, peeled squash at a local market. Definitely saved a ton of time.
- 4-5 cups butternut squash (about a half of one) peeled, seeds out, and cubed
- 8-10 leaves of kale (spinach or other greens)
- 1 large organic honeycrisp apple (or any sweet apple)
- dash of cinnamon
Here is a little note from Reboot recipe page: “Please note the serving size for this juice is 8-10 oz (the recipe makes double this amount so you can share or save a serving for later on)”
I prefer not to store juice as it has the most benefits when it is fresh, but if I have to leave the house for the day, I do make extra and bring with me. Today after I have prepared all the ingredients, I have separated them and refrigerated half, to make a quick fresh juice later. So right now I have a half of an apple (cleaned and sliced), 5 washed leaves of kale and 2 cups of cubed squash ready to go.
And most importantly it does not only taste great, it is loaded with vitamins! I am quoting from Reboot website: “this juice is rich in many important nutrients such as antioxidants, beta-carotene, Vitamin C and Vitamin E (just 8 oz provides 50% of your daily needs). The cinnamon adds a nice spice and flavor plus it has been shown to help keep blood sugar in check.” – sounded good enough for me to try! But on top of this we have added kale and therefore high content of calcium, more vitamin C, vitamin B6, folic acid, more vitamin A (in the form of beta-carotene), vitamin K, potassium, magnesium, copper, and even the plant form of omega-3 fatty acids (alpha-linolenic acid). A must fry!
