Yesterday we went shopping at H Mart, an Asian-inspired supermarket that we love to shop at for an amazing variety of fresh produce, as well as great selection of fresh fish.
Spring time is all about detoxification, and so I loved buying all the beautiful greens H Mart had available. I was so happy to see the dandelion greens, and was looking forward to trying them their natural form.
Traditionally, dandelion roots and leaves were used to treat liver problems. Native Americans also boiled dandelion in water and took it to treat kidney disease, swelling, skin problems, heartburn, and upset stomach. In traditional Chinese medicine, dandelion has been used to treat stomach problems, appendicitis, and breast problems, such as inflammation or lack of milk flow. In Europe, it was used in remedies for fever, boils, eye problems, diabetes, and diarrhea.
Dandelion is a rich source of vitamins A, B complex, C, and D, K, as well as minerals such as iron, potassium, and zinc

So I knew the benefits of these greens and I was determined to introduce them into our diet. Despite my husband’s concern that I won’t know what to do with them, I cooked them for dinner tonight and it was great! That is why I love internet so!

So I sautéed the greens with garlic, in olive oil, then, I made some homemade mashed potatoes with rice milk and mixed in the sautéed dandelion greens as well as some grated cheese. It was delicious! We had a side of baby kale salad with radishes, scallions, feta cheese and tomatoes. Light, fresh, nutritious meal the whole family enjoyed and a definite keeper and now a regular on our menu – the dandelion greens.
